Coconut Cookies | Cardamom Coconut Cookies

Ingredients:
1 1/4 cup desiccated coconut
1 tablespoon poppy seeds
120g butter - softened
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon cardamom powder
1/4 tsp baking soda
1-2 tablespoons milk
Method:
Preheat oven to 180 °C. In a small bowl, mix 1/4 cup desiccated coconut and poppy seeds.
Keep that aside.
In a large bowl, add butter and sugar and whisk until smooth and light.
Next, add all-purpose flour, 1 cup of desiccated coconut, baking powder, cardamom, and baking soda.
Mix everything well with a spatula. Add 1-2 tablespoons milk if the dough is too dry to shape the cookie.
Scoop 1-11/2 tablespoons of cookie dough mixture and shape it into a cookie.
Coat that with a mixture of coconut and poppy seeds.
Place the cookies on a baking tray.
Bake in a preheated oven for 18-20 minutes until golden on top.
Remove the baking tray from the oven, and let the cookies sit on the tray for another 5 minutes.
Later, transfer them to a wire rack to cool down completely.
Once cooled, serve and store the remaining cookies in an airtight jar.
